Cider
Isastegi, Spanish Cider, Basque Country

Isastegi is a family estate from the Basque Country of Spain. With a few apple trees and mostly cattle pastures, the family decided to convert the pastures to more apple trees and start selling their cider to the public. In 2017 a quality designation was created for natural cider called PDO Euskal Sagardoa that Isastegi pushed to get approved. Isastegi carries the notable red neckband representing this Euskal Sagardoa which means this cider is always natural and uses certified local apples.
Trabanco, "Poma Aurea" Spanish Cider 2016

It is a completely natural cider and is made from a particular selection of indigenous apple varieties. They are 2 traditional Asturian varieties used, Regona and Raxao which are known to ferment at low temperatures. The apples are hand sorted and pressed with traditional old wooden presses. The apple must is then transferred to old wooden chestnut barrels and fermented with indigenous wild yeast for several months. Then after the primary fermentation is complete, the cider undergoes a secondary fermentation in a counter-pressure tank for at least 4 months which develops its endogenous carbonation before bottling. This is known as the Granvas method.

Produced by the Sperone Family. The current winery is a family operated winery based just outside of Milan run by Giacomo Sperone, the grandson of the founder Antonio Sperone who started the original winery and bottling plant before WW2. Bombing from the war took out most of the facility but the winery survived allowing Giacomo, the grandson to carry on the family winery

Juergen Grieb, who hails from West Germany moved to Washington State and settled in the Yakima Valley, opened his sparkling wine house and sought to establish acid-driven wines from the grapes grown in Washington.

This is a fun little half bottle of champagne that is a blend of reserve wines and base wines that are aged on the lees to create that extended mouthfeel. There are toasted, fruity, and floral characteristics to the wine.

100% Pinot Noir grapes blended from a mix of Cotes du Beaune vineyards.
Stainless steel fermented with selected yeasts and made with the Methode Traditionelle where a base wine is dosed with a mix of sugar and yeast to the bottle then closed up for secondary fermentation to occur which will give the wine its carbonation. The bottles are disgorged of the sediment and topped off before final packaging.
Bright pink in color, abundant red fruit aromas and flavors such as strawberry, raspberry, and red currants.
Best as an aperitif wine or maybe dessert.

An Emilia-Romagna Lambrusco made with Lambrusco Salamino di Santacroce. These Lambruscos tend to be on the lighter side in style. The name of this Lambrusco variation gets its name from the clusters resembling a sausage of salami.
Similar in a sense to Beaujolais Nouveau, Lambrusco wines are bottled young in order to preserve the freshness and fruitiness of the wine.
Luciano Saetti practices certified organic farming so as to not upset the natural harmony in the vineyard. The grapes are hand-harvested and sorted meticulously. After the primary fermentation, the secondary fermentation is initiated in the bottle with the dry wine being dosed with fresh sugars in the grape must.

Fiorini, "Becco Rosso", Lambrusco Grasparossa di Castelvetro, Italy 2019

From one of the eight total different Lambrusco DOC zones, Becco Rosso comes from the Lambrusco Grasparossa di Castelvetro zone which is the smallest wine-producing region just south of the town of Modena in the Emilia-Romagna zone.
The Poderi Fiorini family is the producer and has been making wine for three generations since 1919 and is practicing organic farming in their vineyards.
Lambrusco as the varietal itself has many variations. This variation is the Grasparossa variation of Lambrusco which is known to produce the most tannic of Lambrusco wine.

White Wine
Effervescent "Raza", Quinta da Raza, Vinho Verde DOC, Portugal 2019

Quinta da Raza is a producer in the Vinho Verde region that lies in the Minho province in Portugal. Vinho Verde is the DOC zone and even though it directly translates to “green wine” it means more like “young wine” where the wines coming out of Vinho Verde are meant to be drunk young, soon after bottling as a fresh style of wine. The wines coming out of Vinho Verde can be red, white, rose, and sparkling.

Muller-Thurgau is a hybrid grape created by Dr. Herman Muller, crossed between Riesling and Madeleine Royale. This Muller-Thurgau is made by Koster-Wolf who has been cultivating grapes and making wine for 11 generations since 1648.
The wine has plenty of citrus and minerality. Plenty of stone fruit flavors and aromas such as peach and apricot can be found in the wine as well as some melon. It is rather light in body but crisp and refreshing.

The wine is aged in 100% stainless steel drums and left on its lees to develop more complexity and mouthfeel.

Monmousseau, Chenin Blanc, Vouvray, Loire Valley, France 2018

Located in the French wine region of Touraine, Vouvray is one of the most popular Appellations of the Loire Valley.
Vineyards in Vouvray were planted at the time of Roman occupation. In the 4th century, monks expanded these vineyards, and since the 14th-century wines from Vouvray have been on the tables of French Kings.
Chenin blanc is the flagship grape for Vouvray. The high acidity level that Chenin blanc carries aids in the preservation of the wine as well as retaining the freshness. The wines made in Vouvray range from dry to semi-sweet and sparkling.

This white wine is composed of two grape varietals; Assyrtiko and Robola
Mercouri Estate’s sustainable vineyards are on the western coast of the Peloponnese near ancient Olympia with vines that are 25-30 years old and heavily influenced by the Mediterranean Sea.
This wine is fermented at low temperatures with a selected yeast strain. There is skin contact on the grapes before pressing which adds some slight tannic texture to the wine.
During the maturation period the wine ages on the lees which adds some more texture and roundness to the palate.

The Negro family has been cultivating their grapevines for 3 centuries in the Roero hills in the Piedmont region of Italy.
This unfiltered dry white wine is made from hand-picked Arneis grape varietal which translates to “little rascal”.
It is bottled, unfined, and unfiltered. There will be wine lees, which is residual yeast that settle out in the bottle. If you shake up the bottle you will redistribute it all into suspension before pouring to get the full effect of how the wine should taste.

Expect rose petal, raspberry, strawberry, and white peach. Very crisp and clean, and very drinkable.
Pairs well with shellfish, pork, brie, and strawberries.

Red Wine
Gran Familia, Rioja, Spain

Gran Familia Rioja comes from Bodegas Castillo de Fuenmayor, located near Briones at the heart of Rioja Alta. This winery belongs to a family with one of the longest traditions in Rioja winemaking and the winemaker has access to some of the finest wines in Rioja.
It is a bright cherry red wine with garnet tints. Ripe red fruit with sweet herbs and hints of spice. This is a savory wine with hints of herb, spicy fruit, and fresh acidity. A touch of vanilla leads to a rounded lingering finish. The juice is fermented in stainless steel tanks. When fermentation is complete, the wine is racked into barrels for 8 months. 50% American oak and 50% French oak.
Antucura, Malbec, Vista Flores, Mendoza, Argentina 2013

In the Uco Valley in Mendoza, Antucura is nestled in the Vista Flores region in Argentina.
The overall climate is dry and desert-like. These vineyards are a high elevation with minimal organic matter in the soils which stresses out the vines. Stressed out vines produce less vegetation and smaller berries. The smaller berries allow for a higher concentration of sugars and tannins resulting in rich, structured, and concentrated wines.
This malbec has a violet intensity of color and is loaded with red and black fruit flavors. There is plush juiciness with fullness and soft acidity.
Ercole, Barbera del Monferrato D.O.C., Piemonte, Italy 2019 (liter)

Ercole, which translates to “Hercules” is produced by a cooperative group of local growers in the Monferrato area.
Made from 100% Barbera grown in the Monferrato region. The most prestigious zones in Monferrato are known to be dedicated to the Barbera grape.
Fermented in concrete and stabilized in stainless steel. This wine is loaded with red fruit such as cherry, strawberry, raspberry, and cranberry. It has some subtle earthiness and minerality to it. The acid level is elevated which will allow for a great pairing with pizza, pasta, or meat-based dishes.
Chateau Fontanes, Cabernet Sauvignon, "Les Traverses" Languedoc-Roussillon 2018

Within the boundaries of the appellation Pic St-Loup, the majority of the production is Cabernet Sauvignon, a grape varietal that is outside of the constraints for the AOC in the Languedoc. This means that in lieu of getting an A.O.C. cru status, the wine must take a Vin de Pays d’Oc designation. The trade-off is that the wines are made the way they want and sold at an incredible price.
Made from 100% Cabernet Sauvignon that is hand-harvested and all the fruit is de-stemmed. The vineyard practices are Organic and biodynamic.

Tintero, Nebbiolo, Langhe, Italy 2018

A delicious and affordable Nebbiolo you don’t have to take a second mortgage out on your home…
Made in the Lange DOC in the Piemonte region of Italy. Elvio Tintero does a great job of capturing the essence of a great Nebbiolo comparable to the ones of the Barolo and Barbaresco regions.
Fermented in stainless steel for 2-3 weeks
Aged 12 months in oak half in barrique barrels and the other half in large casks, then racked into stainless steel before being bottled unfiltered.
Carpineto, Sangiovese, "Dogajolo", Tuscany, Italy 2018

Casa Vinicola Carpineto is a producer that has a few estates in the Tuscan DOCG regions.
Their focus was to produce high-quality Chianti Classico. This wine is a baby “Super Tuscan” made with Sangiovese and Cabernet Sauvignon.
It is stainless steel fermented for 10-15 days with periodic pump-overs. The maturation is done in neutral French and American oak barrels and cement vats for 6 months. The wine is held for 4-6 months in bottle prior to release.
Weingut Manfred Breit, Dornfelder, Mosel, Germany 2019

Mosel is the most famous of Germany’s 13 wine regions. In the second century, the Romans planted grapevines along the Mosel river and in the City of Trier.
It is known for its steep hills that bear the grapevines making it very difficult for laborers to tend the vineyards. Anytime there is heavy rain in the winter, all of the slate at the hilltops wash down the hill and is needed to be carried back up in the vineyard hillsides due to the heat-retaining quality the slate has for the vines.
Dornfelder is actually a cross of two other red grape varietals but those varietals themselves are crosses making Dornfelder’s lineage from almost every red varietals grown in Germany.
Thymiopoulos, Xinomavro, "Young Vines", Naoussa, Macedonia, Greece 2018

Thymiopoulos Vineyards are in the P.D.O. Naoussa region in Greece.
This wine is made from non-irrigated young vines of Xinomavro.
The grapes are hand-picked, and only 75% is de-stemmed allowing 25% to be whole cluster stem inclusion for 12-15 days of maceration. The fermentation is carried out in a stainless steel vessel and left there for 3 months before moving it to concrete tanks for an 8-month maturation.
Terres Dorees, "L'Ancien", Beaujolais Nouveau, Burgundy, France 2019

Started by Jean-Paul Brun in 1979, Terres Dorees is located in Charnay in Southern Beaujolais. The farming in Charnay is organic and farmed sustainably.
Brun sets himself apart from most other Beaujolais producers for many reasons; for one, there is no chaptalization of the must, which is adding sugar to boost alcohol content in the wine. He does not do carbonic macerations with his Gamay. There is no commercial yeast used, all fermentations are native yeast. No sulfur is used with the exception of bottling. Maceration lasts for several months with occurring punch-downs and maturation occurs in a combination of concrete and old oak vats.

Fermented in stainless steel with a commercial yeast strain and aged for 12 months in French oak.
The fruit notes of this wine consist of blueberry, dried apricots, and strawberry that pairs well with the cinnamon and spice notes. Just behind the fruit are some wildflowers which help accentuate the floral aspects.
Rasa Vineyards, "Occam's Razor", Columbia Valley, Washington 2017

Based out of Washington State.
The grapes which are sustainably farmed are mostly Syrah and Cabernet Sauvignon, with a small amount of Sangiovese, Malbec, and Merlot. Pre fermentation maceration lasts about 5 days, this is a cold soak to extract better tannin structure and color. There is 25% stem inclusion for some more tannin structure. Post-fermentation maceration is only about 3 days.
Maturation takes place in French oak barrels with 20% being new oak and the other 80% being neutral and lasts for 2.5 years. So expect some oak flavors.
The wine is unfined and lightly filtered.
Primitivo Quiles, "Raspay", Monastrell, Alicante, Valencia, Spain 2012

Alicante is located in the Valencia region of Spain.
Raspay is the name of the location of the original Quiles family vineyards. In honor of H.M. King Juan Carlos I of Spain with his first official visit to the city of Alicante, this wine was his dinner wine and is the same bottle presentation you see today.
This wine is made with the Monastrell grape varietal which is the Spanish name for Mourvedre.
Aged for 2 years in semi-old American oak.
Le Piane, Maggiorina, Vino Rosso, Boca, Italy 2018

Once the heart of a vibrant wine-making area in the northern Piedmont region, Industrialization in the 1950s caused people to abandon Boca vineyards and move closer to the city for easier factory money. The Boca DOC went from 40,000 hectares in the 1950s to less than 10 hectares in 1998.
Antonio Cerri was the last producer left in the 1990s at age 80. He would say: "With me, Boca will die."
To carry on his legacy and ensure that Boca would not die with Anotonio Cerri, Christoph Kuenzli bought the estate, and he expanded Cerri's small vineyard to a manageable size of 6.5 ha to carry on the tradition of making great wine in Boca.
Piece de l'Oree, Eric Chevalier, Loire Valley, Pinot Noir, France 2018

This is an organically farmed Pinot Noir from the Loire Valley. While Eric Chavalier is foremost a muscadet producer he achieves great success with Burgundian varietals as well.
This Pinot Noir is made with carbonic maceration, similar to the style of vinification that Beaujolais Nouveau is made, leaving whole clusters of grapes to ferment as oppose to crushing and destemming the fruit.
The result for this wine is a juicy, fruit-driven wine with tartness and acidity to drive the refreshing flavors home. Cherries and cranberry with a minerality that allows for a high crushability.

Marcel Lapierre’s mentor, Jules Chauvet, is the man who in the 1950s spoke out against chemical fertilization in the name of protecting “natural wine” and the traditional viticultural and winemaking methods of Beaujolais
Marcel Lapierre famously championed organic farming, hand-harvesting ripe fruit, and the winemaking philosophy of nothing added, nothing is taken away.
This bottling is designed specifically for the purpose of drinking and consists of Gamay grown within the Morgon cru, the high yields from these young vines exceed the limit required to qualify for the Morgon appellation.

Istine, Chianti Classico, Tuscany, Italy 2017

The Istine Chianti Classico is a blend of all three of their vineyards’ Sangiovese. It is fermented in stainless steel and aged for 8-10 months in large, Slavonian oak barrels. This wine displays the bright red fruit concentration the region is known for while also showing a minerality and firm acidity. The wine is fresh and elegant. Enjoy with spaghetti bolognese, lasagna, salume, or pizza.
Jean Foillard, Beaujolais-Villages, France 2018

Jean Foillard made his name by making wine from small and prestigious sites within the Beaujolais cru of Morgon. Jean had been rushing to make Beaujolais Nouveau be ready in time for the creeping up November celebration of Beaujolais Nouveau day but eventually, he decided he didn’t want to rush anymore.
From grapes grown just barely outside the Beaujolais region’s famous Crus, this wine is silky and seductive, with floral, fruit, and earth notes of rose petals, red berries, and stones. It has just the right amount of tannin and acidity.
Guido Porro, "Gianetto", Barolo, Piemonte, Italy 2014

Guido is the fourth generation at an estate that has always been passed from father to son. The Porros continue to work just as their predecessors did with the only major change over the last few decades has been the decision to bottle at the estate instead of selling the wine.
The Vineyards in Serralunga d’Alba are sustainably farmed.
Only indigenous yeasts are used. Almost all barrels used are at least 5th passage; new barrels are introduced as needed.
The “Gianetto” vines are the youngest of the Estate.
Maceration in cement vats lasts 20-25 days with pump-overs 3-4 times daily

Planted in 1972 the Olson Estate Vineyard was one of the first vineyards to appear in what is now the Dundee Hills AVA of Oregon's famed Willamette Valley.
This brightly aromatic Pinot Noir is loaded with prominent red and black fruit like cherry and blueberry with chocolate, oak, and violets on a lengthy finish.
Fermentation: 17 days in 1.5-ton bins and wood tank Barrel Aging: 22 months in 5% new French oak and 95% neutral French oak.
Punta, Crena, "Cruvin" Liguria, Italy 2018

Owned and operated by the Ruffino family in Liguria of the Colline Savonesi region of Italy.
Corvino, a dark-skinned red grape grown, as far as we know, exclusively by the Ruffino family of Punta Crena, in their vineyards overlooking the seaside town of Varigotti, is a fussy native grape that gives tiny yields.
The name Cruvin means “to fall” in local dialect because the grape easily falls off the vine when it is ripe. The fox on the label is sitting under the vine waiting for the grapes to ripen.

La Quercia's vineyard and estate are run by four friends - Elisabetta, Antonio, Luca, and Fabio - who met each other while working at a big winery in the late 80s.
This Montepulciano is a great example of what happens when you match low-yield winemaking expertise with a prolific growing zone, and constantly cut, cut, cut back the vines. Made by winemaker Antonio Lamona, the result is one of the best quality.
